Let's Be Cops tells the story of two thirty-year-old best friends, Justin Miller and Ryan O'Malley, struggling to find their place in Los Angeles. Justin, a talented but unsuccessful video game designer, and Ryan, a former college quarterback whose glory days are behind him, find themselves at a crossroads, reminiscing about a pact they made in their youth: if they weren't successful by thirty, they would move back to their hometown of Columbus, Ohio.
Leaving a bar one night, Ryan’s car is aggressively bumped by a vehicle belonging to a menacing Albanian gang, foreshadowing the trouble to come. Justin’s career takes another hit when his pitch for a police-themed video game is rejected by a potential investor. Feeling dejected, Ryan convinces Justin to wear the police uniforms they used for the presentation as costumes for their upcoming college reunion.
At the reunion, surrounded by their classmates' apparent success, Justin and Ryan feel their own failures more acutely. They jokingly decide to uphold their pact to return to Ohio, but a chance encounter changes their plans. While walking down the street in their costumes, they are mistaken for real police officers. They find themselves unexpectedly respected and even feared, an experience they both find surprisingly empowering.
Ryan, ever the impulsive one, embraces the charade wholeheartedly. He begins researching police procedures online, watching countless hours of YouTube videos, and even modifies his decommissioned Ford Crown Victoria Police Interceptor to resemble a genuine LAPD patrol car, complete with lights and sirens. Justin, initially hesitant, is eventually drawn into the deception, finding a newfound confidence he had previously lacked.
The fake police work has unexpected benefits. Justin finally catches the eye of Josie, a waitress at a local restaurant named Georgie’s, whom he has been trying to impress. The duo use their “authority” to intimidate the same Albanian gang that bumped Ryan’s car, successfully driving them out of Georgie’s, further solidifying their fake personas and impressing Josie.
As their charade continues, the lines between fantasy and reality begin to blur. They find themselves responding to a real distress call alongside Patrol Officer Segars, a genuine LAPD officer. This experience brings Justin back down to earth, making him realize the serious legal consequences they face if their deception is exposed.
However, another incident pulls them back into the game. Josie calls Justin, panicked about a man harassing her at the restaurant. The harasser turns out to be Mossi Kasic, the intimidating leader of the Albanian gang, who recognizes the “officers” from their previous encounter. Mossi uses his intimidation tactics to ensure they do nothing, highlighting their vulnerability and the danger they have unwittingly placed themselves in.
Determined to protect Josie, Justin and Ryan obtain surveillance equipment from Segars, ostensibly to gather evidence against Mossi. Their surveillance reveals Mossi meeting with an unidentified partner, who is revealed to be actively investigating Ryan and Justin, suspecting them of being federal agents.
The friends witness Mossi receiving a large shipment of crates. They then interrogate the nervous delivery driver, Pupa, to gain more information. Josie, who is an aspiring makeup artist, uses her skills to disguise Justin as Pupa, allowing him to infiltrate Mossi’s club. Inside, Justin is forced to smoke crystal meth and participate in a brutal bare-knuckle boxing match to maintain his cover. During their infiltration, they discover the contents of the crates: stolen police firearms, SWAT equipment, and a secret tunnel connecting Mossi’s club to Georgie’s restaurant.
The escalating danger and the weight of their deception strain their friendship. Justin, overwhelmed by the situation, accuses Ryan of using the fake police work to compensate for his own lack of direction in life. Ryan retorts, criticizing Justin’s cowardice and his inability to stand up for himself. The two friends have a falling out and go their separate ways.
Ryan, taking his newfound responsibility seriously, attempts to bring the evidence they’ve gathered against Mossi to Segars. However, he is introduced to Detective Brolin, the head of the organized crime unit, who is revealed to be Mossi’s partner in crime. Brolin recognizes Ryan and threatens him, solidifying the danger they are in.
Meanwhile, a newly assertive Justin, inspired by his experiences, decides to pitch his video game idea again, this time wearing his police uniform. In a darkly comedic twist, one of Brolin’s corrupt officers arrives with the intention of killing him, but inadvertently strengthens Justin's pitch. Justin manages to escape, but Ryan is abducted by Mossi’s men.
Realizing the gravity of the situation, Justin calls Segars and confesses everything about their deception. He also confesses the truth to Josie before bravely entering the secret tunnel alone to rescue Ryan. Inside the club, Ryan cleverly manipulates Mossi and Brolin, turning them against each other. Mossi, in a fit of rage, kills Brolin. Justin attempts to rescue Ryan, but he is quickly overpowered by Mossi’s men.
Just as things look bleak, Segars arrives, leading to a chaotic gunfight. Ryan and Justin seize the opportunity to arm themselves with the stolen SWAT equipment. They find themselves cornered by Mossi, but Segars intervenes at the last moment, shooting Mossi and allowing the friends to escape unharmed.
The film concludes with both friends finding their true paths. Justin, emboldened by his experiences, finds success as a video game developer, finally achieving his professional goals. Ryan, inspired by his brief foray into law enforcement, graduates from the police academy and becomes a legitimate LAPD officer. Justin apologizes to Josie, and they rekindle their relationship. In a final humorous scene, Ryan arrives with Pupa, now his informant, and drags Justin into another high-speed chase, suggesting that their adventures, albeit legal ones now, are far from over.
